The perfect dinner party menu:

DJ and I hosted a dinner party last night for one of his high school friends and her husband who just moved to Cleveland. I usually love throwing dinner parties and don't usually get stressed out about them, but for some reason, I was totally stressed out about this one. I debated about what to serve, trying to find something that would be fairly easy, slightly impressive and not predictable like lasagna. Luckily, I happened across these three recipes in the last week, thanks to friends who are amazing cooks. These are recipes that are sure to impress everyone! Needless to say, the dinner party went wonderfully well and we had a great time. And the food turned out amazing! Enjoy!

Appetizer:

Lib Welhelm's Cheese Slaw
1 lb Swiss cheese, grated
1/2 c mild banana peppers, chopped fine
1/2 c jalepeno peppers, chopped fine
1 bunch green onions, chopped fine (white & green parts)
mayonnaise
Mix together first four ingredients and add enough mayo so that is all binds together. Can store in fridge for a week; may need to add a little more mayo before serving. Serve with Fritos, crackers, or carrot/celery sticks. For a dramatic presentation, hollow out a purple cabbage and use as a "bowl" for the dip.

Main Meal:

Skewered Ginger Beef
1 c sugar
1 c soy sauce
1/2 c vegetable oil
1 bunch green onions, sliced
6 garlic cloves, minced
1/4 c sesame seeds, toasted
3/4 tsp ginger
2 tsp pepper
2 lbs steak or chicken
Mix together all ingredients in a blender. Add toasted sesame seeds. Slice meat into thin strips and place on skewers. Pour mixture over beef skewers and marinate for 8 hours. Grill.

Greek Pasta Salad
1 16 oz package penne pasta
3 c chicken, cooked and shredded
1 c feta cheese
1 c cucumber, diced
1 c carrots, shredded
1 c cherry tomatoes, quartered
1/2 c green onion, chopped
1 package baby spinach leaves
Dressing (recipe follows)
Cook pasta until firm. Toss with other ingredients. Add dressing and let chill for at least four hours before serving.
Dressing:
1/2 c cider vinegar
1/2 c sugar
1 garlic clove, minced
1 green onion
1/2 tsp salt
1 c vegetable oil
Blend ingredients in blender. Add:
3 tsp poppy seeds
Note: This salad may be made ahead. However, do not add the spinach leaves and dressing until four hours before serving.

Corn on the Cob

Dessert:

Edy's Chocolate Fudge Chunk Ice Cream

That looks REALLY good! Good for you! And did you paint your shutters? The house looks very good.:) And I just realized, too, that James is older than DJ. It makes me feel better knowing we just finished grad school and we're not the only ones.:) I'm glad things are going so well. Miss seeing you!
